This sweet fruit wine has a velvety mouthfeel and finishes on a mellow note. It has distinct rhubarb flavors and aromas and a pale copper color. It’s sourced from 100% whole Crimson Rhubarb cultivated in Washington State. It pairs well with rhubarb pie, cheesecake, and soft cheeses like brie, camembert and goat cheese.
We take great pride in fermenting our fruit wine long and slowly at low temperature, with as little fining as possible in order to amplify and preserve the natural flavors. We arrest fermentation in order to keep the natural fructose, and then add sucrose which aids in the fermentation process and maximizes the preservation of the natural sugars for an intense fruity flavor. The rich color of this wine is the result of cold soaking the whole fruit in enzymes which release the natural colors.
